Ingredients:
- Sushi rice
- Nori sheets
- Red bell pepper
- Yellow bell pepper
- Orange bell pepper
- Carrot
- Avocado
- Cucumber
Vegan food colouring from Craft Company
- Sushi rice vinegar
Instructions:
1. Begin by cooking your sushi rice according to package instructions. Once cooked, allow it to cool to room temperature. While the rice is cooling, prepare your flower petals. Cut the red, yellow, and orange bell peppers, as well as the carrot, into thin strips resembling petals. For the centre of the flower, slice the avocado and cucumber into thin strips as well.
2. Cut three nori sheets in half to create six smaller sheets for the petals.
3. Divide the cooled sushi rice into four portions. Place each portion in a separate freezer bag. Add a dash of vegan food colouring and a splash of sushi rice vinegar to each bag, one for red, one for yellow, one for orange, one for green and leave one portion plain. Shake each bag until the rice is evenly coloured then put each colour in its own bowl.
4. Starting with the centre of your flower, lay out a full nori sheet and spread the green-coloured rice evenly over it. Place strips of cucumber and avocado along one edge of the nori, leaving a small border and roll
5. Take each half nori sheet and spread a portion of the coloured rice onto it. Arrange the red, yellow, and orange bell pepper strips on top of the rice, making sure they overlap slightly to create the appearance of flower petals. I made six petals for my rolls
6. Once the flower elements are prepared, lay out three nori sheets and cover 2/3 of each sheet with plain white sushi rice, leaving the remaining 1/3 empty.
7. Carefully arrange the coloured rolls into a flower pattern on the white rice-covered portion of the nori sheets, with the green roll in the centre and the coloured rolls surrounding it to resemble flower petals.

8. Gently roll the sushi using a bamboo mat or your hands, ensuring that the flower remains in the centre of the roll. Use a little water to seal the edge of the nori.
9. With a sharp, damp knife, slice the roll into individual pieces, revealing the beautiful flower pattern inside each slice.
